Black Forest Roulade

Christmas dinner was at my mum’s in 2014 – she was cooking the dinner and I was making dessert. Nobody in my family is keen on Christmas pudding and we always eat way too much so I wanted to make something Christmassy but quite light.

 

This roulade is a classic Mary Berry recipe, however, I wanted to make it a bit more special for Christmas so I added a extra fruity filling. Instead of just cream I added a filling from a good quality cherry jam and some cherry brandy liqueur and extra cherries.
